Vegan Banana Peanut Butter Ice Cream

Here is a healthy dessert recipe for ice cream that the kids will be sure to enjoy during National Ice Cream Month!
Summer is officially in full swing and nothing says summer like the ringing of the ice cream truck coming down the block. While a good scoop of Rocky Road won’t hurt your nieces and nephews, here at The Beauty Bean we try to keep it healthy whenever possible. So, we’ve created our own dairy-free, sugar-free and flavor-packed “ice cream” made of wholesome, healthy ingredients that will make sure summer doesn’t turn you or the kids into softies! Plus, it’s creamy, sweet, cold and completely satisfying – so even the non-health conscious kiddies will be sure to love it.
Ingredients
2 frozen bananas, chopped
15 tbsp. natural creamy peanut butter
¼ cup almond milk (coconut milk, soy milk or dairy options work too!)
¼ tsp. vanilla extract
1 tbsp. dark chocolate chips, fresh strawberries or your favorite ice cream topping
Directions
Mix bananas, peanut butter and almond milk in a blender on very low speed, stopping to stir with a wooden spoon every once in a while. When smooth, remove from blender. Depending on the strength and heat of your blender, you may need to place the mix in a bowl in the freezer for about 10-15 minutes. Remove, add toppings and serve!
